Ham and Cheese Egg Casserole

6 c. frozen diced potatoes
3 c. cooked lean ham, diced
1 1/2 c. fresh mushrooms, sliced
6 green onions, sliced
1 dozen eggs (3 3/4 c. egg substitute)
1 1/2 c. skim milk
1 1/2 c. cheddar cheese, shredded

Preheat oven to 320 degrees. Lightly coat a 9" x 13" baking dish with cooking spray. Layer potatoes evenly on the bottom of the dish and top with ham, mushrooms, and onions. In a small mixing bowl, beat egg substitute and skim milk with a fork or whisk until well blended. Pour egg mixture over ham and vegetables in baking dish and top with cheese. Bake until eggs are firm and top is lightly browned, approximately 40 minutes. Cut into 12 portions. Serve and enjoy! (serves 12, prep time approx 50 minutes)

Cinnamon Rolls

Rolls
2. c. milk (scald)
1/2 c. margarine or shortening
2/3 c. sugar
1 1/2 tsp. yeast
2 eggs
7 c. flour
1 c. mashed potatoes

Scald milk, add margarine, sugar, salt, mashed potatoes. Cool 10 minutes. Add yeast. Beat in 2 eggs and 1/2 of the flour until smooth. Add the rest of the flour and knead on a floured surface. Put in a clean greased bowl, cover with a wet towel and let rise until doubled. (30 minutes in a turned off oven that had been heated to 200 degrees).

Filling:
3/4 c. margarine
1 1/2 c. brown sugar
4 Tbsp. cinnamon
optional: raisins or pecans

Roll out into 2 rectangles. Spread filling then roll up into a long tube. Cut tubes every 1-2 inches and place in a pan that has been sprayed with Pam and lined with waxed paper. Let rolls rise again. Bake 400 degrees for 15 minutes.

Timpanogos Temple Closing for two weeks

It was brought to our attention that the Timpanogos Temple will be closed for cleaning for two weeks beginning November 7th.  This will mean that we will not have our RS sessions on Wednesday November 8th.  The Draper temple is much smaller than Timpanogos and may require making an appointment to do a session so we will take November off and resume on the second Wednesday of December.  We do, however, encourage you to go on  your own this month!
