Rolls
2. c. milk (scald)
1/2 c. margarine or shortening
2/3 c. sugar
1 1/2 tsp. yeast
2 eggs
7 c. flour
1 c. mashed potatoes
Scald milk, add margarine, sugar, salt, mashed potatoes. Cool 10 minutes. Add yeast. Beat in 2 eggs and 1/2 of the flour until smooth. Add the rest of the flour and knead on a floured surface. Put in a clean greased bowl, cover with a wet towel and let rise until doubled. (30 minutes in a turned off oven that had been heated to 200 degrees).
Filling:
3/4 c. margarine
1 1/2 c. brown sugar
4 Tbsp. cinnamon
optional: raisins or pecans
Roll out into 2 rectangles. Spread filling then roll up into a long tube. Cut tubes every 1-2 inches and place in a pan that has been sprayed with Pam and lined with waxed paper. Let rolls rise again. Bake 400 degrees for 15 minutes.
